Yellow Croaker Fried with Lichen (Tai-cai-tuo-huang-yu)

material:
  Yellow-fin tuna that was boned out 200g,green moss detritus 15g,flour200g,yeast 9g,shaoxing wine 15g,refined salt 7.5g,chopped fistular onion 5g,pepper 0.5g,five spices powder spice powder 0.3g,sesame oil 10g,peanut oil, 1500g(use about 100g).

Methods:
1.Firstly, clean the yellow-fin tuna, cut it into bars of 5cm long and 1cm wide, then mixed the tuna bars evenly with the shaoxing wine, refined salt, chopped fistulas onion (3.5g), pepper.

2. Mix a certain amount of flour with green moss detritus, yeast, water(about 200g)into thick paste in a bowl (avoid too much mixing for proper glutinosity)

3. Put the frying pan with peanut in it on a roaring fire until the oil is moderately hot. Then put the tuna bar with paste into the pan one by one on the low fire, and pick out those tuna bars with cooked paste. When all the tuna bars are fried initially, put them together into the pan and fry them until the paste become deep green. After that, put the pan on roaring fire again and fry the tuna bars until they become crisp. The fried tuna bar should be put into a strainer to get out the excessive oil. At last, mix the fired tuna bars with chopped fistulas onion (1.5g), spice powder, and sesame oil and put them in a plate.
